2 Min Eggless Mango Cake

Ingredients:
- All Purpose flour / Maida - 4 tbsp
- Sugar powdered- 4 tbsp
- Baking Powder - 1/2 tsp
- Baking Soda - 1/4 tsp
- Mango Puree - 4 tbsp
- Oil - 1 tsp
- Milk - 4 tbsp
- Vanilla Extract - few drops
- Grated Chocolate and gems for plating (You can choose chocolate chips /nuts etc.)
Method:
- In a bowl, add all the wet ingredients milk, oil, vanilla and 3 tbsp mango pulp.
- Then add all the dry ingredients flour, sugar, baking powder and baking soda.
- Mix everything well and add chocolate chips/nuts.
- Transfer this mix in a microwave safe bowl and microwave for 2 minutes. I checked the mix after 90 seconds, it was little wet so left for another 30 seconds.
- Take out the mango cake.
- Now pour the leftover 1 tbsp mango pulp on the cake and smoothen it.
- Then sprinkle grated chocolates and put few gems on it.
- Now you yummy instant mango cake is ready to serve.
Tips:
- Keep checking cake at 90 sec and after 2 min. Insert a toothpick in the cake, if it comes out clean then your cake is ready. Do not overbake. If you over bake, it will be rubbery.
- I pulsed granulated sugar in the blender so it will dissolve easily.
- It its not done in 2 minutes, leave it for another 10 seconds.
- You can use any other fruit puree other than mango too.
- Mix gently . Mixing too much can make the cake hard.
- Do not add too much mango pulp otherwise it will become soggy.
