Sambar for Dosa-2

Hello everyone.. In the series of south indian dosa , today I am going to share the recipe of sambar. This recipe is actually inspired by my Maa and Hubby. I am lucky to have them as I am foodie and both of them cook very well. I just love their cooking.A masala dosa is made by stuffing a dosa with lightly cooked potatoes, onions, green chilli and spices.It is incomplete without tasty sambar and mouth watering coconut chutney. According to Wikipedia  Masala dosa is listed as number 49 on World's 50 most delicious foods complied by CNN in 2011. It is also cited as top ten tasty foods of the world (2012).Sambar is prepared by cooking yellow lentil and veggies with spices. You have option to add as many veggies to sambar. It can be enjoyed with idli, uttapam and dosa. You can now read as well as watch my recipe just by clicking the video tab given at the end of the post. Ingredients:


  1. Onion / Pyaaj chopped - 1.5 -2 cups
  2. Tomato / Tamatar -1 cup
  3. Pumpkin  /Kohda chopped - 2 cups 
  4. Yellow Lentils/Arhar Daal -1 cup
  5. Tamarind water/Imli Paani (soak tamarind in water for 10-15 min and squeeze it and strain it)
  6. Green Chillies / Hari Mirch chopped - 3-4pcs (quantity depends upon preference)
  7. Garlic/Lehsun finely chopped- 2 tspn
  8. Turmeric Powder / Haldi - 1 tspn
  9. Red Chilli Powder / Lal mirch powder- 1 tspn
  10. Garam Masala - 2 tspn
  11. Sambar Masala - 2tspn
  12. Asadetida / Hing- 1/4 tspn
  13. Salt / Namak - to taste
  14. Oil
  15. Coriander Leaves / Dhaniya chopped - for garnishing


For Tadka:

  1. Oil
  2. Dry Red Chilli/Sukha Lal Mirch -2
  3. Curry Leaves/ Curry Patta - 10-15
  4. Black Mustard Seeds/Rai - 1 tspn



Method:


  1. Heat oil in pan. Then put hing and add chopped green chillies with onion and saute for 2 minutes.
  2. After that add chopped garlic and cook it till onion turns light brown in color.
  3. Now add turmeric powder, red chilli powder, garam masala, sambar masala and mix it well.
  4. After cooking the spices for 5 minutes add pumpkin, daal,tomato and salt and allow it to cook for few more minutes.
  5. When the mixture is half done, then transfer the mixture from pan to pressure cooker.
  6. After transferring the mixture, add 3 cups of water or as per your desired thickness of sambar and cook it till 3 whistles.
  7. Now switch off the flame, open the cooker and mix tamarind water in sambar. You can increase or decrease the quantity as desired.


For Tadka:

  1. Heat oil in pan or tadka pan.
  2. Now add dry red chillies, curry leaves and rai.
  3. Wait till rai splutters and curry leaves becomes light crisp. Then immediately pour this tadka on sambar and mix it well.
  4. Now garnish sambar with coriandar leaves and your sambar is ready to be served with dosa, uttapam or idli.


Tips:

  1. You can add more veggies to sambar as per your choice.
  2. If you don't want to use tamarind water then increase the quantity of tomatoes.
